Fruit Leathers


It's exciting when the seasons change, not just the weather but food and appetite as well.  One thing I look for are fresh cranberries.  I was very pleased to see these start popping up a couple weeks ago.  Cranberries have a bright color and flavor.  Perfect for baking but also very nice paired with apples in recipe.  I can't resist a fruit roll up, leather or snack.  (gummy bears too. )  No special tools or need for a food dehydrator, just an oven.

Apple Cranberry Fruit Leathers

2 lbs apples, peeled, seeded, cored

1 pint fresh cranberries

juice of 1 lemon

agave syrup, to taste or not at all

Prepare 2 rimmed baking sheets with parchment paper.  Papers edges should just pass the lip.  Set aside.

Place apples and cranberries with just less than a 1/2 inch of water in a large pot and cook covered until fruit is soft and breaking down, about 15 minutes.  Add lemon juice and  puree in a blender until smooth.  Sweeten with agave syrup if desired.  Pour into prepared baking sheets  and lightly shake sheets to get mixture thin and evenly spread.  Bake in 200 degree oven until dry to the touch, 6-8 hours.

Allow to cool and remove parchment paper from baking sheets.  Leave fruit leather on the paper, cut to desired shape and size.  Store in air tight container.
