Taco Night: Home Made Corn Tortillas


You're taco night will never be the same again.  The taste is and texture is better to any tortilla you could purchase at a grocery store.  You will need a tortilla press and plastic wrap.   This recipe makes about 8 tortillas, perfect for 2-3 people.

You will also need masa harina which is a flour made from corn.  It is not corn meal.  It can be found at specialty shops and most large grocery stores, often in the international foods aisle.  I find mine at whole foods.

Soft Corn Tortillas  

1 cup masa harina

1/2 cup plus 1 tablespoon water

very small drizzle of canola oil, for pan

Mix flour and water together until it resembles fresh, smooth play dough.  Form into small balls about a large tablespoon sized.  While working, keep moist with a damp towel.

Cover each side of the tortilla press maker with a sheet of plastic wrap.  Don't skip the plastic wrap or you'll never get the tortilla off.  Place 1 ball of dough in center of open press.  Close and use lever to flatten.  Gently open press.  Tortilla will be sandwiched between plastic sheets.  Remove top sheet.  Invert on your hand and peel plastic sheet away from tortilla.  Slide tortilla onto hot hot, very lightly oiled skillet.  Cook 30 seconds on each side.  Remove from skillet and keep warm in dry folded towel or lidded container.  Repeat with each ball of dough.  Admire your homemade tortillas. fill and serve.
